Ingredients for 4 people:
- 1 whole chicken
- 3 whole gloves of garlic
- 2 peeled and crushed gloves of garlic
- 1 cup breadcrumbs
- 1 Onion
- 3 Carrots
- 1 pinch of Crushed Pepper
- 2 pinches of Salt
- 2 tablespoons Clos Saint Sozy Duck Fat or Goose Fat
- 1 tablespoon herbs of choice (fresh sage and dried oregano as an example)
Preparation:
- Chop onions and carrots
- Turn the oven at 240°C
- Rub the breadcrumbs with the Crushed Garlic, Salt and the Crushed Pepper
- Stuff the chicken with the breadcrumbs and the 3 whole gloves of garlic
- Coat the Chicken with the Duck Fat
- Put the Chicken in an oven proof dish
- Cook the chicken for 15 to 20 minutes while checking it from time to time
- Turn the chicken on the other side and cook for 15 to 20 minutes
- Once the chicken is cooked 15 to 20 minutes on each side add the carrots, the onions, the 3 whole gloves of garlic , the herbs and a glass of water, then cook for 20 minutes.
