Roasted chicken

Ingredients for 4 people:

  • 1 whole chicken
  • 3 whole gloves of garlic
  • 2 peeled and crushed gloves of garlic
  • 1 cup breadcrumbs
  • 1 Onion
  • 3 Carrots
  • 1 pinch of Crushed Pepper
  • 2 pinches of Salt
  • 2 tablespoons Clos Saint Sozy Duck Fat or Goose Fat
  • 1 tablespoon herbs of choice (fresh sage and dried oregano as an example)


  1. Chop onions and carrots
  2. Turn the oven at 240°C
  3. Rub the breadcrumbs with the Crushed Garlic, Salt and the Crushed Pepper
  4. Stuff the chicken with the breadcrumbs and the 3 whole gloves of garlic
  5. Coat the Chicken with the Duck Fat
  6. Put the Chicken in an oven proof dish
  7. Cook the chicken for 15 to 20 minutes while checking it from time to time
  8. Turn the chicken on the other side and cook for 15 to 20 minutes
  9. Once the chicken is cooked 15 to 20 minutes on each side add the carrots, the onions, the 3 whole gloves of garlic , the herbs and a glass of water, then cook for 20 minutes.
  10. The chicken is ready to be served
