French fries cooked in Clos Saint Sozy Duck Fat

Ingredientsfor 6 people:

  • 2kg potatoes
  • 4 jars of Clos Saint Sozy Duck fat (then the duck fat can be used several times removing residues after each cooking).
  • Salt

Preparation:

  1. In a deep fryer, warm Clos Saint Sozy Duck Fat at 150°C
  2. Peel and wash the potatoes and cut in to sticks. Rinse and drain on a clean cloth. Plunge them only in small quantities in to the hot fat and cook during 10 minutes.
  3. Once the French fries have a golden colour, drain them on an absorbent paper towel, salt, and serve immediately.
